Unit Summary:  Chocktaw Casino Resort in Durante, Oklahoma is a P & L food & beverage account managed by the DNC Gaming Hospitality Group.  The facility features 800 gaming machines and a 100 room hotel.  Visit www.choctawcasinos.com for more information.

Your Role: This position will initially be responsible for effectively managing the existing food & beverage operations at Chocktaw Casino Resort and overseeing the construction of new, multi venue food & beverage operations including a fine dining restaurant/steakhouse, buffet, Mexican restaurant, food court, casual dining café, coffee/bakery outlet and catering and banquet operations.  Anticipated annual revenues are $15M.  The operations compliment an existing casino and 100 room hotel, which will be replaced with a 330 room four star hotel.

Specific responsibilities include ensuring consistency in the quality and service delivery of food & beverage; establishing and maintaining operational, quality, and service controls and standards; establishment and monitoring of budgets and food costs for all food service venues;

training and development of food service professionals; and application of sanitation standards.

Our Expectations: Qualified associates must have a minimum of seven (7) years experience in food service management with responsibility for multiple venues, thorough knowledge of food preparation and purchasing, and strong organizational and communication skills. College degree in hotel/restaurant administration is preferred. A  commitment to excellence in guest service is required.
