Smith & Wollensky, located in Columbus’ Easton Town Center, is seeking an Experienced Executive Chef. Candidate must have at least 2+ years in an executive chef position.
Hotel experience as well as experience with dry aged beef and butchering is a definite plus! The duties will include but are not limited to the following:
*Continued Development and overseeing policy and procedures relevant to all aspects of kitchen operations.
*Manage 2-3 Sous Chefs as well as a total kitchen staff of approximately 30 people.
*Responsible for the overall direction, coordination, and evaluation kitchen employees·
*Interviewing, hiring, and training employees.
*Planning, assigning, and directing work; appraising performance; rewarding and disciplining employees.
*Must be available to work a variety of shifts, weekends and holidays.
*Assists in training of all culinary employees, including the development of training agendas and materials.
*Assist with budget development and labor cost controls
*Responsible for overall cleanliness, sanitation and safety of all areas within the food operation.
*Responsible for storage, rotation and pars for food.
*Assists the Food & Beverage Purchasing Manager with the receiving and storage of all food and culinary small wares.
*Responsible for maintaining consistent food specifications, including: taste, appearance, presentation, portion control and quality.
